A delightful summer dish featuring grilled zucchini topped with creamy goat cheese, fragrant basil, and a drizzle of honey.
Ingredients

- 5 medium zucchinis
- Salt
- 1 Tbsp olive oil or avocado oil
- 1/3 cup goat cheese, crumbled
- 2 Tbsp fresh basil, chopped
- 1.5 Tbsp honey
- Salt + pepper, to taste
Instructions
- Prep the zucchini: Remove the ends and slice into 1/2-inch pieces, lengthwise. Sprinkle salt and set aside for 20 minutes.
- Pat them dry using a cloth to achieve grill marks.
- Heat the grill to medium-high.
- Oil the zucchini slices on both sides.
- Grill the zucchini for 10-15 minutes, flipping halfway through.
- Serve on a plate, topping with goat cheese, basil, and honey. Season with salt and pepper.
Notes
Make ahead by slicing zucchini a few hours in advance. Store leftovers in an airtight container for 2-3 days.
