Description

A delightful summer dish featuring grilled zucchini topped with creamy goat cheese, fragrant basil, and a drizzle of honey.


Ingredients

Scale
  • 5 medium zucchinis
  • Salt
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Salt + pepper, to taste

Instructions

  1. Prep the zucchini: Remove the ends and slice into 1/2-inch pieces, lengthwise. Sprinkle salt and set aside for 20 minutes.
  2. Pat them dry using a cloth to achieve grill marks.
  3. Heat the grill to medium-high.
  4. Oil the zucchini slices on both sides.
  5. Grill the zucchini for 10-15 minutes, flipping halfway through.
  6. Serve on a plate, topping with goat cheese, basil, and honey. Season with salt and pepper.

Notes

Make ahead by slicing zucchini a few hours in advance. Store leftovers in an airtight container for 2-3 days.
