- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until soft and fragrant.
- Stir in the ground turkey, cooking until it’s beautifully browned and crumbly.
- Next, add the diced zucchini and chickpeas, stirring to combine all the delicious textures.
- Season with cumin, paprika, salt, and pepper to taste, allowing the spices to mingle.
- Cook for an additional 5-7 minutes, until the zucchini is tender yet still has a nice bite.
- Garnish with fresh parsley and serve hot, drizzling a little extra olive oil if desired.
