- 1 cup black beans (canned, drained, and rinsed)
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, diced

- 1 lime, juiced
- Salt and pepper to taste

Instructions
- Heat a skillet over medium heat and cook the chicken breasts for about 6-7 minutes on each side, or until they’re cooked through. Let them rest a few minutes before slicing.
- In a large bowl, combine the sweet corn, black beans, creamy avocado, halved cherry tomatoes, diced red onion, and fresh cilantro.
- Drizzle the lime juice over the mixture, and add a splash of olive oil if desired. Season with salt and pepper to taste and gently toss.
- Slice the rested chicken and serve it artfully over your fresh corn mixture.
