Description

A comforting and nutrient-packed black bean soup that warms you from the inside, perfect for cozy evenings at home.


Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable or chicken broth
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add in the chopped onion and bell pepper. Sauté for about 5 minutes until they soften.
  3. Stir in the minced garlic, cumin, and chili powder; let it cook for about 1 minute.
  4. Toss in the black beans, diced tomatoes, and pour in the broth, bringing the mixture to a gentle boil.
  5. Once boiling, lower the heat and let it simmer for 15 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, optionally garnished with cilantro or avocado.

Notes

This soup tastes even better the next day. Store leftovers in an airtight container in the fridge for up to 5 days.
