- 2 cans black beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups vegetable or chicken broth
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add in the chopped onion and bell pepper. Sauté for about 5 minutes until they soften.
- Stir in the minced garlic, cumin, and chili powder; let it cook for about 1 minute.
- Toss in the black beans, diced tomatoes, and pour in the broth, bringing the mixture to a gentle boil.
- Once boiling, lower the heat and let it simmer for 15 minutes.
- Season with salt and pepper to taste.
- Serve hot, optionally garnished with cilantro or avocado.
Notes
This soup tastes even better the next day. Store leftovers in an airtight container in the fridge for up to 5 days.
