Description

These cookies are tender, buttery, and drizzled with a luscious glaze, inspired by the beloved Kentucky Butter Cake.


Ingredients

  • 2 large eggs
  • 1 cup (225 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • ½ cup (100 grams) powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp butter extract (optional)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 grams) unsalted butter
  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (60 mL) water
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the softened butter with granulated and powdered sugars until light and fluffy.
  3. Blend in the eggs, vanilla extract, and butter extract until well combined.
  4. Fold in the flour, baking powder, and salt, mixing minimally.
  5. Roll the dough into 1.5-inch spheres and flatten on the prepared baking sheets.
  6. Bake for 10-12 minutes until edges are set but centers are slightly underdone.
  7. Cool on the baking sheets for 5 minutes before transferring to a wire rack.
  8. Melt the remaining butter and mix in sugar and water until dissolved, then stir in vanilla extract.
  9. Brush or drizzle the glaze over warm cookies, allowing it to soak in.
  10. Cool completely to let the glaze solidify.
