- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1/2 cup butter (for frosting)
- 2/3 cup cocoa powder (for frosting)
- 3 cups powdered sugar (for frosting)
- 1/3 cup milk (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl. Mix well until fully integrated and smooth.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Stir until combined and smooth.
- Stir in the boiling water cautiously — your batter will be quite thin, but that’s fine!
- Divide the batter evenly between your prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then carefully remove from pans and let cool completely on wire racks.
- Combine ingredients for the frosting in a bowl and whip until smooth and creamy.
- Frost the cooled cakes as desired and enjoy!
Notes
For variations, consider adding chocolate chips, nuts, or fruit layers. You can bake the cakes a day in advance and store them covered.
