Description

A cozy and hearty chicken taco soup packed with protein, perfect for family dinners or meal prep.


Ingredients

  • 1 lb chicken breast
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes (with juices)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Lime wedges and cilantro for garnish

Instructions

  1. Sauté the onion and garlic over medium heat until soft and fragrant, about 3-4 minutes.
  2. Add the chicken breast to the pot, cooking until browned on all sides, roughly 5-7 minutes.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and chicken broth, blending all those delicious flavors together.
  4. Bring the mixture to a gentle boil, then lower the heat and let it simmer for 20-30 minutes.
  5. Remove the chicken from the pot, shred it with two forks, and then return it to the pot.
  6. Season with salt and pepper to taste, adjusting as needed.
  7. Serve hot, garnished with fresh lime wedges and a sprinkle of cilantro.

Notes
