Description

These creamy and comforting High-Protein Egg Bites are packed with nutrition and are perfect for busy mornings or a delightful snack anytime.


Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced veggies (spinach, bell peppers, onions, or your choice)
  • Salt and pepper to taste
  • Optional herbs (e.g., chives, parsley, or your choice)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with muffin liners.
  2. Whisk together the eggs and cottage cheese in a large bowl until well combined.
  3. Stir in the shredded cheese, diced veggies, salt, pepper, and any optional herbs.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the bites are set and slightly golden on top.
  6. Allow to cool for a few minutes before removing them from the tin. Enjoy warm or store in the refrigerator.
