Description

Ingredients

  • 1/4 cup protein powder
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (like nuts, seeds, or chocolate chips)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the almond flour, protein powder, baking soda, baking powder, and salt in a mixing bowl.
  3. Whisk together the eggs, honey (or maple syrup), and applesauce until smooth.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in any desired mix-ins.
  6. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.
