Description

A comforting one-pan dish featuring juicy chicken thighs coated in sweet and tangy barbecue sauce, served on fluffy rice.


Ingredients

  • 1.5 lbs Chicken Thighs
  • 2 tbsp Olive Oil
  • 1.5 cups Long-Grain White Rice
  • 3 cups Chicken Broth or Water
  • 1 cup Barbecue Sauce
  • 0.5 cup Honey
  • 1 medium Onion
  • 3 cloves Garlic

Instructions

  1. Sauté the onions and garlic in olive oil over medium heat for 2-3 minutes until fragrant.
  2. Brown the chicken thighs on both sides for about 5 minutes. Season with salt and pepper.
  3. Mix the barbecue sauce and honey in a bowl until blended.
  4. Add the rice around the chicken, pour in the chicken broth, and drizzle the sauce over everything.
  5. Simmer on low heat for 30-35 minutes until rice is fluffy and chicken is cooked through.
  6. Final touches: let it rest for 5 minutes, then fluff the rice.
  7. Serve the chicken and rice with sauce on top and garnish with herbs.

Notes

You can prep the chicken and the marinade the night before for deeper flavor. Leftovers can be stored in the fridge for up to 3 days.
