Description

A warm and comforting dish combining tender chicken, sweet potatoes, and green beans in a flavorful honey garlic glaze.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Whisk together the honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
  2. Marinate the chicken in the sauce for at least 30 minutes or up to 8 hours in the refrigerator.
  3. Preheat the oven to 400°F.
  4. Spread the cubed sweet potatoes on a lined baking sheet and drizzle with olive oil and season with salt and pepper.
  5. Roast the sweet potatoes for about 15 minutes until they start to soften and turn golden.
  6. Remove the baking sheet from the oven and push the sweet potatoes to one side.
  7. Place the marinated chicken on the other side and arrange the green beans around them.
  8. Drizzle the remaining marinade over the chicken and vegetables.
  9. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F.

Notes

Marinate the chicken a day in advance for extra flavor. Store leftovers in an airtight container for up to 3 days.
