  • 1/4 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional)
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Whisk together honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper until well combined.
  2. Add the chicken breasts to the marinade, ensuring they’re fully coated. Let them soak for 10-15 minutes to absorb the flavors.
  3. Heat a skillet over medium heat. Cook the marinated chicken for 5-7 minutes on each side until golden and fully cooked through.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing into tender strips.
  5. Prepare your bowls by adding warm rice as the base.
  6. Arrange the sliced chicken over the rice, then add avocado, cherry tomatoes, corn, and red onion on top.
