Ingredients
Scale
- 2 large chicken breasts (about 400g)
- 2 tablespoons honey
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups cooked white or brown rice
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/4 cup red onion, sliced
- 3 tablespoons fresh cilantro, chopped
- 1/2 cup Greek yogurt or sour cream (optional)
- 1/2 teaspoon chili flakes (optional)
Instructions
- Whisk together honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper until well combined.
- Add the chicken breasts to the marinade, ensuring they’re fully coated. Let them soak for 10-15 minutes to absorb the flavors.
- Heat a skillet over medium heat. Cook the marinated chicken for 5-7 minutes on each side until golden and fully cooked through.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing into tender strips.
- Prepare your bowls by adding warm rice as the base.
- Arrange the sliced chicken over the rice, then add avocado, cherry tomatoes, corn, and red onion on top.
- Sprinkle with fresh cilantro and add Greek yogurt or sour cream, if desired. A sprinkle of chili flakes adds a kick!
- Serve immediately while warm for a cozy dining experience.
Notes
Customize with various toppings; you can marinate the chicken ahead for deeper flavors. Store leftovers in an airtight container for up to 3 days.
