- 1 lb shrimp, peeled and deveined
- 1 lb cod, cut into bite-sized pieces
- 1 lb mussels, cleaned
- 1 lb clams, cleaned
- 1 can (28 oz) chopped tomatoes
- 4 cloves garlic, minced
- 1 large onion, chopped
- 1 cup vegetable broth
- 2 tbsp olive oil
- Fresh herbs (like parsley or basil), for garnish
- Salt, to taste
- Pepper, to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sautéing until they are translucent.
- Pour in the vegetable broth and let it simmer.
- Add the chopped tomatoes along with salt and pepper. Stir well to combine.
- Stir in the shrimp, cod, mussels, and clams.
- Cover the pot and allow it to cook for 10-15 minutes.
- Garnish with fresh herbs before serving.
Notes
