Description

A comforting seafood cioppino that combines shrimp, cod, mussels, and clams in a savory tomato broth.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb cod, cut into bite-sized pieces
  • 1 lb mussels, cleaned
  • 1 lb clams, cleaned
  • 1 can (28 oz) chopped tomatoes
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 1 cup vegetable broth
  • 2 tbsp olive oil
  • Fresh herbs (like parsley or basil), for garnish
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sautéing until they are translucent.
  3. Pour in the vegetable broth and let it simmer.
  4. Add the chopped tomatoes along with salt and pepper. Stir well to combine.
  5. Stir in the shrimp, cod, mussels, and clams.
  6. Cover the pot and allow it to cook for 10-15 minutes.
  7. Garnish with fresh herbs before serving.

Notes
