- 4 pieces Boneless Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Lemon Juice
- 3 cloves Garlic, minced
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Crumbled Feta Cheese
- 2 tablespoons Fresh Parsley, chopped (for garnish)
Instructions
- Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
- Add chicken breasts and coat them with the marinade. Cover and refrigerate for at least 30 minutes (overnight is even better for deeper flavor).
- Preheat your oven to 400°F (200°C).
- Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for about 3-4 minutes on each side until golden brown.
- Sprinkle crumbled feta cheese generously on top of the chicken. Optionally, add some lemon slices on top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before serving, allowing all those delicious juices to settle in.
- Garnish with freshly chopped parsley for a vibrant finish, and dig in!
Notes
For an extra flavor boost, add cherry tomatoes or kalamata olives before baking. Marinate the chicken a day in advance for enhanced flavor.
