Description

A comforting Mediterranean dish featuring succulent chicken breasts marinated in lemon, garlic, and oregano, topped with creamy feta cheese.


Ingredients

  • 4 pieces Boneless Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 3 cloves Garlic, minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Crumbled Feta Cheese
  • 2 tablespoons Fresh Parsley, chopped (for garnish)

Instructions

  1. Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
  2. Add chicken breasts and coat them with the marinade. Cover and refrigerate for at least 30 minutes (overnight is even better for deeper flavor).
  3. Preheat your oven to 400°F (200°C).
  4. Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for about 3-4 minutes on each side until golden brown.
  5. Sprinkle crumbled feta cheese generously on top of the chicken. Optionally, add some lemon slices on top.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for a few minutes before serving, allowing all those delicious juices to settle in.
  8. Garnish with freshly chopped parsley for a vibrant finish, and dig in!

Notes

For an extra flavor boost, add cherry tomatoes or kalamata olives before baking. Marinate the chicken a day in advance for enhanced flavor.
