Description

Delightful cookies combining oats, coconut, chocolate, and pecans, perfect for sharing with family and friends.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until creamy and smooth.
  3. Beat in the eggs and vanilla extract until well blended.
  4. Combine the flour, baking soda, and salt in another bowl.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Stir in the rolled oats, shredded coconut, chopped pecans, and chocolate chips.
  7. Drop generous spoonfuls of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes until golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a lighter version, replace half the butter with unsweetened applesauce.
