  • 1 cup wild blueberries
  • Extra granulated sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and lemon zest until well combined.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the wild blueberries gently.
  7. Scoop tablespoon-sized amounts of dough, roll them into balls, and roll each ball in granulated sugar.
  8. Place the cookies on a baking sheet lined with parchment paper, spaced about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are golden.
  10. Let the cookies cool on the baking sheet for a couple of minutes before transferring them to a wire rack.
