Ingredients

  • 2 chicken breasts (cubed or sliced thin)
  • 1 lb potato gnocchi (store-bought or homemade)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Slice the chicken into bite-sized pieces, halve your cherry tomatoes, and prepare your gnocchi.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Season the chicken with a sprinkle of salt and black pepper and cook until golden brown, about 5–7 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. Toss in the minced garlic and sauté for about 30 seconds until fragrant.
  6. Add the halved cherry tomatoes and cook for 2 minutes until softened.
  7. Pour in the chicken broth and bring to a gentle simmer.
  8. Stir in the cream, lemon zest, and juice while briefly removing the skillet from heat.
  9. Allow the gnocchi to cook for 3–4 minutes until tender.
  10. Toss in the baby spinach and the chicken, then season to taste and garnish as desired.
