Description

Ingredients

  • 1 pound ground beef
  • 1 cup salsa (your favorite variety)
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 ripe avocado, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the potatoes into cubes and toss them in a bowl with olive oil, salt, and pepper until they are well coated. Spread the seasoned potatoes on a baking sheet and roast for 25–30 minutes, or until they turn golden and tender.
  2. While the potatoes are roasting beautifully in the oven, grab a skillet and brown the ground beef over medium heat. Add the chili powder, cumin, garlic powder, salt, and pepper to taste, cooking until the meat is fully browned. Don’t forget to drain any excess grease for a lighter dish!
  3. In serving bowls, layer the warm roasted potatoes and seasoned ground beef, creating a hearty base for your toppings.
