Description

A vibrant and nutritious salad featuring fluffy quinoa, tender chickpeas, and a medley of fresh vegetables, all enhanced by warm Moroccan spices.


Ingredients

  • 1 cup quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water, then cook it according to package instructions.
  2. In a large mixing bowl, combine the cooked quinoa, chickpeas, diced red bell pepper, cucumber, finely chopped red onion, and fresh parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, cumin, turmeric, cinnamon, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately, or refrigerate for a while for best results.
