- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 cup heavy cream (for mousse)
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for ganache)
Instructions
- Combine graham cracker crumbs and melted butter in a mixing bowl, then press into the bottom of a 9×9 inch dish to form a crust.
- Beat together peanut butter, powdered sugar, 1 cup heavy cream, and vanilla extract in another bowl until smooth and fluffy. Spread the peanut butter mousse over the crust.
- Heat 1/2 cup heavy cream in a small saucepan until it begins to simmer, then pour it over the chocolate chips in a bowl and let sit for a minute before stirring until smooth.
- Pour the ganache over the peanut butter layer and spread evenly.
- Refrigerate for at least 240 minutes or until set. Cut into squares to serve.
Notes
This dessert can be made a day in advance and stored in the fridge. It’s perfect for gatherings and can be customized with toppings.
