Description

These healthy and delicious Oatmeal Protein Cookies are packed with protein and fiber, making them the perfect energizing snack for any time of day.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the rolled oats, protein powder, and baking soda in a mixing bowl and mix until well combined.
  3. Mix the almond butter, honey, and vanilla extract in another bowl until smooth and creamy.
  4. Combine the wet ingredients with the dry ingredients, stirring well to ensure everything is mixed.
  5. Fold in the chocolate chips if desired.
  6. Scoop tablespoons of the mixture onto a baking sheet lined with parchment paper, shaping them gently.
  7. Bake for 10-12 minutes or until the edges are golden brown and the center looks set.
  8. Allow to cool on the tray for a few moments before transferring to a wire rack to cool completely. Now, enjoy!
