- 1/2 cup Parmigiano Reggiano, grated
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the carrot fries with the oil, salt, and pepper in a large bowl until evenly coated.
- Sprinkle the grated Parmigiano Reggiano over the fries and mix again carefully.
- Spread the coated fries in a single layer on a baking sheet.
- Roast for about 16-20 minutes, mixing halfway through.
- Serve with a zesty chipotle mayo dip and garnish with fresh parsley.
