Ingredients

  • 1 1/4 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 2/3 cup unsalted butter, melted
  • 3 cups chopped peaches (about 45 large peaches)
  • 1/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice (or water)
  • 3 tablespoons cornstarch
  • 3/4 cup flour
  • 1/4 cup large flake oats
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream (or milk)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. Make the shortbread base by whisking together 1 1/4 cup flour, 1/2 cup powdered sugar, and 1/4 teaspoon salt, then stir in 2/3 cup melted butter until combined.
  3. Press the mixture into the bottom of the pan and bake for 15 minutes or until slightly golden.
  4. Prepare the peach layer by tossing the chopped peaches with 1/4 cup granulated sugar, 2 tablespoons lemon juice (or water), and 3 tablespoons cornstarch until evenly coated.
  5. Make the crumble topping by stirring together 3/4 cup flour, 1/4 cup oats, and 1/3 cup brown sugar, then mix in 1/3 cup melted butter until it resembles wet sand.
  6. Spread the peach mixture over the baked shortbread base, then crumble the oatmeal mixture on top.
  7. Return the pan to the oven and bake for 35-45 minutes until golden brown and the peaches are bubbling.
  8. Cool fully on the counter.
  9. Glaze by whisking together 1 cup powdered sugar, 1/2 teaspoon vanilla extract, and enough cream to achieve a drizzly consistency, then drizzle over the bars once cooled.
