- 1/4 cup honey

Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl until well combined.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut in the butter until the mixture resembles coarse crumbs.
- Fold in the diced peaches, ensuring even distribution throughout the mixture.
- Combine the heavy cream, egg, and vanilla extract in a separate bowl. Mix until smooth.
- Add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix!
- Turn the dough onto a floured surface and knead gently a few times until it comes together.
- Roll out the dough to 1-inch thickness. Cut into triangles or circles, depending on your preference.
- Place the scones on the prepared baking sheet and bake for 15-20 minutes until golden brown.
- Whisk together the honey and vanilla for the glaze, then drizzle over the warm scones. Serve warm and enjoy!
