- 1 cup pumpkin puree
- 1 cup almond flour
- 1/2 cup protein powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine the pumpkin puree, almond flour, protein powder, baking powder, baking soda, pumpkin pie spice, salt, eggs, maple syrup (or honey), and vanilla extract in a blender.
- Blend until the mixture is smooth and well combined; it should feel creamy and inviting!
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow cooling for a few minutes before serving.
Notes
You can prepare the batter the night before and store it in the fridge. For best results, store leftover muffins in an airtight container.
