- 1 cup quinoa
- 2 cups vegetable broth or water
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced

Instructions
- Rinse the quinoa under cold water. In a saucepan, combine the rinsed quinoa and vegetable broth or water, and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- Heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they’re tender and begin to brown.
- Add the minced garlic to the mushrooms and sauté for an additional 1-2 minutes, until the garlic becomes fragrant and turns a lovely golden color.
- Season with salt and pepper to taste, allowing the flavors to meld beautifully.
- Fluff the quinoa with a fork and gently combine it with the sautéed mushrooms, ensuring every grain is infused with the garlicky goodness.
- Serve warm, garnished with fresh parsley for a sprinkle of color and fresh flavor.
