Description

A creamy, zesty dish that brings the flavors of classic street corn right to your stovetop, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 tablespoons butter
  • 4 cups frozen corn
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 cup cotija cheese
  • 1/4 cup cilantro or green onions

Instructions

  1. Start by melting the butter in a large skillet over medium-high heat.
  2. Stir in the frozen corn and cook until heated through, about 5 minutes.
  3. Add the mayonnaise, sour cream, lime juice, cumin, and chili powder, stirring until creamy.
  4. Mix in half of the cotija cheese until melted.
  5. Sprinkle with remaining cotija cheese and garnish with chili powder and cilantro or green onions.

Notes

This dish can be made ahead of time and reheated. Substitute Greek yogurt for sour cream if desired.
