Ingredients

- 1 cup sourdough discard
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 apple, peeled and diced
- 1 egg
- 1/4 cup milk
- Oil for frying
- Powdered sugar for dusting
Instructions
- Combine the sourdough discard, flour, baking powder, cinnamon, nutmeg, salt, and sugar in a mixing bowl until well blended.
- Whisk together the egg and milk in another bowl until light and frothy.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Fold in the diced apples.
- Heat oil in a frying pan over medium heat until hot.
- Drop spoonfuls of batter into the hot oil, frying until golden brown on both sides, about 2–3 minutes.
- Remove the fritters from the oil and let them drain on paper towels.
- Dust with powdered sugar before serving.
Notes
For added flavor, consider using tart apple varieties like Granny Smith. Make-ahead batter can be refrigerated before frying.
