Ingredients

- 1 cup long-grain rice
- 2 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat a tablespoon of olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the rice and cook for another 2-3 minutes until slightly toasted.
- Add the diced tomatoes (with juice), broth, onion powder, cumin, and paprika, stirring until well combined.
- Season with salt and pepper to taste, then bring to a boil.
- Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve.
Notes
This dish can be made ahead of time. Simply reheat with additional broth to keep it moist. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
