- 1 (8-oz.) block feta cheese
- 1 (12-16 oz.) bag frozen spinach, thawed
- 1 cup plain whole-milk Greek yogurt
- 1/2 cup mayonnaise
- 2 garlic cloves, grated
- A generous pinch crushed red pepper flakes
- 1 cup sliced pepperoncini peppers, roughly chopped
- 1 1/2 cups grated fresh mozzarella cheese, divided
- Non-stick cooking spray
- Pita chips, crostini, or fresh veggies for serving
Instructions
- Preheat your oven to 400ºF and grease an 8×8-inch baking dish with non-stick spray.
- Crumble the feta cheese into a bowl.
- Wring out excess water from the thawed spinach and add it to the bowl with feta.
- Mix in yogurt, mayonnaise, garlic, crushed red pepper flakes, chopped pepperoncini, and 1 cup mozzarella cheese. Stir until combined.
- Transfer the mixture to the greased dish, spreading it evenly, and sprinkle the remaining mozzarella on top.
- Bake for 26 to 30 minutes until bubbly and golden. For extra browning, broil for the last 2 minutes.
- Serve warm with pita chips, crostini, or fresh veggies.
