Description

A creamy, cheesy dip bursting with flavors of feta, spinach, and pepperoncini, perfect for gatherings or chilly evenings.


Ingredients

  • 1 (8-oz.) block feta cheese
  • 1 (12-16 oz.) bag frozen spinach, thawed
  • 1 cup plain whole-milk Greek yogurt
  • 1/2 cup mayonnaise
  • 2 garlic cloves, grated
  • A generous pinch crushed red pepper flakes
  • 1 cup sliced pepperoncini peppers, roughly chopped
  • 1 1/2 cups grated fresh mozzarella cheese, divided
  • Non-stick cooking spray
  • Pita chips, crostini, or fresh veggies for serving

Instructions

  1. Preheat your oven to 400ºF and grease an 8×8-inch baking dish with non-stick spray.
  2. Crumble the feta cheese into a bowl.
  3. Wring out excess water from the thawed spinach and add it to the bowl with feta.
  4. Mix in yogurt, mayonnaise, garlic, crushed red pepper flakes, chopped pepperoncini, and 1 cup mozzarella cheese. Stir until combined.
  5. Transfer the mixture to the greased dish, spreading it evenly, and sprinkle the remaining mozzarella on top.
  6. Bake for 26 to 30 minutes until bubbly and golden. For extra browning, broil for the last 2 minutes.
  7. Serve warm with pita chips, crostini, or fresh veggies.
