Ingredients

- 2 cups white rice
- 4 cups vegetable broth or water
- 1 onion, chopped
- 2 cups fresh spinach, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- Fresh dill or parsley for garnish (optional)
Instructions
- Begin by heating the olive oil in a large pan over medium heat.
- Add the chopped onion and sauté until it turns translucent, about 3-4 minutes.
- Toss in the white rice, stirring gently for a couple of minutes to toast it slightly.
- Pour in your vegetable broth (or water) and bring the mixture to a gentle boil.
- Reduce the heat to low and cover the pan with a lid. Allow it to cook for about 15 minutes, or until the rice is tender and the liquid is fully absorbed.
- Remove the lid and stir in the chopped spinach, salt, freshly cracked black pepper, and zesty lemon juice. Cook for an additional 5 minutes, just until the spinach is beautifully wilted.
- Fluff the rice with a fork and garnish with fresh dill or parsley if desired.
Notes
Store any leftovers in an airtight container in the fridge for up to 4 days. It also freezes beautifully for up to 3 months.
