Description

A comforting spinach rice dish that is quick, nutritious, and perfect for busy weeknights.


Ingredients

  • 2 cups white rice
  • 4 cups vegetable broth or water
  • 1 onion, chopped
  • 2 cups fresh spinach, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Begin by heating the olive oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until it turns translucent, about 3-4 minutes.
  3. Toss in the white rice, stirring gently for a couple of minutes to toast it slightly.
  4. Pour in your vegetable broth (or water) and bring the mixture to a gentle boil.
  5. Reduce the heat to low and cover the pan with a lid. Allow it to cook for about 15 minutes, or until the rice is tender and the liquid is fully absorbed.
  6. Remove the lid and stir in the chopped spinach, salt, freshly cracked black pepper, and zesty lemon juice. Cook for an additional 5 minutes, just until the spinach is beautifully wilted.
  7. Fluff the rice with a fork and garnish with fresh dill or parsley if desired.

Notes

Store any leftovers in an airtight container in the fridge for up to 4 days. It also freezes beautifully for up to 3 months.
