Description

A delightful quick bread that combines fresh strawberries and zesty lemon, perfect for summer gatherings.


Ingredients

  • 2 cups (240g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 ounces (227g) fresh strawberries, hulled and chopped
  • ¾ cup (180mL) milk
  • ½ cup (113g) unsalted butter, melted
  • 1 large egg
  • ½ teaspoon vanilla extract
  • Juice of half a lemon (about 2 Tablespoons)
  • Zest of one lemon
  • ¼ cup (50g) granulated sugar
  • Juice of half a lemon (about 2 Tablespoons)
  • 2 Tablespoons (30mL) warm water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard 9×5-inch loaf pan.
  2. Combine the all-purpose flour, granulated sugar, baking soda, and salt in a large bowl, whisking until well blended.
  3. Mix together the milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest in a separate bowl.
  4. Add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the hulled and chopped strawberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Prepare the sweet lemon glaze while the bread is cooling.
  9. Drizzle the lemon glaze over the warm loaf before cooling fully.

Notes

For cleaner slices, use a serrated bread knife and wait until the bread has completely cooled.
