Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix well until the crumbs are fully coated.
- Press the graham cracker mixture firmly into the bottom of the prepared springform pan to create a sturdy crust.
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add in 1 cup of sugar and the vanilla extract, beating until fully combined.
- Incorporate the eggs one at a time, mixing well after each addition to ensure a luscious texture.
- Gently fold in the sour cream, combining it with the cheesecake batter.
- Pour the batter into the crust, smoothing the top with a spatula.
- Arrange the peach slices and mixed berries artfully on top of the cheesecake batter.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
- Once done, cool to room temperature before refrigerating for at least 4 hours (or overnight) to allow the flavors to meld.
