Description

A creamy, lush cheesecake adorned with juicy peaches and a medley of fresh summer berries, perfect for gatherings and family dinners.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix well until the crumbs are fully coated.
  3. Press the graham cracker mixture firmly into the bottom of the prepared springform pan to create a sturdy crust.
  4. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  5. Add in 1 cup of sugar and the vanilla extract, beating until fully combined.
  6. Incorporate the eggs one at a time, mixing well after each addition to ensure a luscious texture.
  7. Gently fold in the sour cream, combining it with the cheesecake batter.
  8. Pour the batter into the crust, smoothing the top with a spatula.
  9. Arrange the peach slices and mixed berries artfully on top of the cheesecake batter.
  10. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
  11. Once done, cool to room temperature before refrigerating for at least 4 hours (or overnight) to allow the flavors to meld.

Ensure cream cheese and eggs are at room temperature for a smooth batter. Allow cheesecake to chill for at least 4 hours for best results.
