Description

Ingredients

  • 3 ripe bananas (mashed)
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas thoroughly using a fork or a potato masher until they are mostly smooth.
  3. Add the melted butter and mix well to combine.
  4. Stir in the baking soda and a pinch of salt into the banana mixture.
  5. Add the sugar, beaten egg, and vanilla extract to the bowl and mix everything until well combined.
  6. Gradually add 1 cup of all-purpose flour to the mixture, stirring gently until just incorporated. Be careful not to over-mix!
  7. Pour the batter into a greased 4×8 inch loaf pan. Use a rubber spatula to smooth the top for an even bake.
  8. Place the loaf pan in the preheated oven and bake for 60-65 minutes. To check for doneness, insert a toothpick into the center; it should come out clean or with a few moist crumbs.
  9. Remove the banana bread from the oven and allow it to cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely.

This banana bread can be made ahead of time and stored in an airtight container for up to four days at room temperature, or frozen for up to three months.
