- 1/2 cup vegetable oil
- 1/2 cup brown sugar

- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1/2 cup chocolate chips or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners or spray with cooking spray.
- Whisk together the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and creamy.
- In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt until well combined.
- Add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Fold in chocolate chips or walnuts if desired.
- Divide the batter evenly among the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool in the tin for a few minutes before transferring to a wire rack.
Notes
These muffins can be made ahead of time and frozen for quick snacks. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
