Instructions
- Preheat your oven to 350°F (175°C).
- Wash the russet potatoes thoroughly before pricking them with a fork. Wrap them in foil and bake for about 60 minutes, or until fork-tender.
- Once cooled enough to handle, peel the potatoes and place them in a large mixing bowl.
- Add the softened cream cheese, sour cream, and milk to the potatoes. Use a sturdy fork or a potato masher to mash them until light and fluffy. Sprinkle in some salt and pepper.
- Fold in the crispy turkey bacon, shredded cheddar cheese, and green onions.
- Transfer the fluffy mixture into a greased 9×13 inch baking dish, spreading it evenly. Top with additional cheese.
