  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup sour cream
  • 1 cup cream cheese, softened
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese (plus more for topping)
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Optional: Additional toppings like crispy breadcrumbs or chives

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash the russet potatoes thoroughly before pricking them with a fork. Wrap them in foil and bake for about 60 minutes, or until fork-tender.
  3. Once cooled enough to handle, peel the potatoes and place them in a large mixing bowl.
  4. Add the softened cream cheese, sour cream, and milk to the potatoes. Use a sturdy fork or a potato masher to mash them until light and fluffy. Sprinkle in some salt and pepper.
  5. Fold in the crispy turkey bacon, shredded cheddar cheese, and green onions.
  6. Transfer the fluffy mixture into a greased 9×13 inch baking dish, spreading it evenly. Top with additional cheese.
  7. Bake for 30 minutes or until the cheese is bubbly and golden.
