Description

A cozy and comforting casserole that combines the flavors of traditional cabbage rolls in a simplified form.


Ingredients

  • 2 small onions, diced
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic (or 1 teaspoon garlic powder)
  • 1 green bell pepper (can use red or yellow)
  • 1 pound lean ground beef
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon smoked or sweet paprika
  • 1 can diced tomatoes (14 oz can)
  • Salt and pepper, to taste
  • 1/2 large head of cabbage, chopped into bite-size pieces
  • 1 to 2 cups shredded cheddar cheese (can use Monterey jack cheese)

Instructions

  1. Prepare vegetables: Dice the onions and bell peppers, mince the garlic, and chop the cabbage into bite-sized pieces.
  2. Sauté the aromatics: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Sauté the onions and garlic for about 3-4 minutes until softened, then add the bell pepper and sauté until tender. Remove from the pan and set aside.
  3. Brown the beef: In the same pan, add the ground beef and brown it, breaking it into small pieces until fully cooked through.
  4. Flavor it up: Add the onion powder, oregano, paprika, diced tomatoes, salt, and pepper to the beef; mix everything well to combine.
  5. Add the cabbage: Toss in the chopped cabbage, cover the skillet, and cook on medium heat for 10 minutes. Stir well and cook for another 15 minutes until the cabbage is tender.
  6. Melt the cheese: Top with shredded cheese and allow it to melt before serving.

Notes

You can prepare this casserole in advance and store it in the fridge. Leftovers can be stored for up to 4 days.
