Ingredients

  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan, forming a cozy crust for your cheesecake.
  3. Beat the cream cheese with an electric mixer until smooth and creamy. Gradually add in 1 cup sugar and vanilla extract, blending until beautifully combined.
  4. Add eggs one at a time, mixing just until incorporated for a luscious filling.
  5. Fold in the sour cream until smooth, adding an extra layer of creaminess.
  6. Pour the cheesecake filling over the crust in the springform pan, smoothing the top with a spatula.
  7. Bake for 55-60 minutes, or until the center is set but still slightly jiggly—this will ensure it remains soft and creamy!
  8. Cool on a wire rack, then refrigerate for at least 240 minutes before serving to let the flavors meld together perfectly.
