Ingredients

- 6–8 cups watermelon, cubed
- 2 cups arugula
- 1 heaping cup fresh basil, chopped
- 2/3 cup feta cheese, crumbled
- 1/2 large red onion, thinly sliced
- 1/4 cup pine nuts
- Flaky sea salt, to taste
- Freshly cracked black pepper, to taste
- 1/4 cup olive oil
- 2 Tbsp. red wine vinegar
- 2 Tbsp. lemon juice, freshly squeezed
- 1–2 Tbsp. honey
- 1 Tbsp. Dijon mustard
Instructions
- In a large bowl, combine the cubed watermelon, arugula, chopped basil, crumbled feta cheese, thinly sliced red onion, and pine nuts.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine everything.
- Season with flaky sea salt and freshly cracked black pepper to taste.
- Serve immediately and enjoy!
