Description

A refreshing summer salad with sweet watermelon, tangy feta, and vibrant greens, perfect for any gathering.


Ingredients

  • 68 cups watermelon, cubed
  • 2 cups arugula
  • 1 heaping cup fresh basil, chopped
  • 2/3 cup feta cheese, crumbled
  • 1/2 large red onion, thinly sliced
  • 1/4 cup pine nuts
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/4 cup olive oil
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. lemon juice, freshly squeezed
  • 12 Tbsp. honey
  • 1 Tbsp. Dijon mustard

Instructions

  1. In a large bowl, combine the cubed watermelon, arugula, chopped basil, crumbled feta cheese, thinly sliced red onion, and pine nuts.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey, Dijon mustard, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine everything.
  4. Season with flaky sea salt and freshly cracked black pepper to taste.
  5. Serve immediately and enjoy!

Notes

You can prepare the ingredients ahead of time, but dress just before serving for the best texture.
