Instructions
- Mix the glutinous rice flour, watermelon juice, and sugar in a bowl until smooth.
- Pour the mixture into a microwave-safe dish and cover with plastic wrap.
- Microwave on high for 2-3 minutes, stirring halfway through until thick and translucent.
- Dust a clean surface with cornstarch and transfer the mochi mixture onto it.
- Allow it to cool slightly before dividing into small pieces.
- Optionally, wrap a small piece around a watermelon chunk to shape it into a ball.
- Let it cool completely before serving.
