Description

A delightful and chewy watermelon mochi that captures the essence of summer, perfect for gatherings or as a nostalgic treat.


Ingredients

  • 2 cups glutinous rice flour
  • 1 cup watermelon juice
  • 1/4 cup sugar
  • Cornstarch for dusting
  • Watermelon chunks (optional for filling)

Instructions

  1. Mix the glutinous rice flour, watermelon juice, and sugar in a bowl until smooth.
  2. Pour the mixture into a microwave-safe dish and cover with plastic wrap.
  3. Microwave on high for 2-3 minutes, stirring halfway through until thick and translucent.
  4. Dust a clean surface with cornstarch and transfer the mochi mixture onto it.
  5. Allow it to cool slightly before dividing into small pieces.
  6. Optionally, wrap a small piece around a watermelon chunk to shape it into a ball.
  7. Let it cool completely before serving.
