- 2 medium zucchini, grated
- 1/2 cup Parmesan cheese, grated
- 1/2 cup Mozzarella cheese, shredded
- 1/4 cup all-purpose flour
- 2 large eggs
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10 minutes to drain excess water.
- Combine the drained grated zucchini, Parmesan cheese, Mozzarella cheese, flour, eggs, garlic, salt, and pepper in a bowl. Mix until well combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of your spoon. Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from heat and drain on paper towels. Serve warm.
Notes
For better crispiness, press the grated zucchini in a kitchen towel to squeeze out more moisture.
