Description

Comforting, crispy zucchini fritters with a cheesy, tender interior perfect for family dinners.


Ingredients

Scale
  • 2 medium zucchini, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10 minutes to drain excess water.
  2. Combine the drained grated zucchini, Parmesan cheese, Mozzarella cheese, flour, eggs, garlic, salt, and pepper in a bowl. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of your spoon. Fry until golden brown on both sides, about 3-4 minutes per side.
  5. Remove from heat and drain on paper towels. Serve warm.

Notes

For better crispiness, press the grated zucchini in a kitchen towel to squeeze out more moisture.
